Yup, this a pizza made of cauliflower. Sounds weird, I know. Tastes awesome, I swear. You can top this pizza any way you like, I’ve tried many different varieties but this time I went for a classic margherita pizza. I ate the whole thing and feel great. How many times have you felt good after devouring an entire pizza??
You’re going to need:
3 cups shredded cauliflower
1 egg (preferably free range organic)
1 cup shredded mozzarella
6 slices buffalo mozzarella
7 fresh basil leaves
salt and pepper to taste
Start with shredding 3/4 head of fresh organic cauliflower. I shredded mine with a cheese grader. Works great. Preheat your oven to 450 F.
You’re going to have to soften the cauliflower. I fry it on medium heat for about 8 minutes. I don’t even put any oil in the pan, just keep an eye on it and stir it with a wooden spoon. You can use a microwave if you’re in a rush but it may affect theÂ nutritionalÂ composition of the cauliflower. Once the cauliflower is softened, put it in a mixing bowl. Pat with a paper towel to absorb excess moisture. Â Allow the mixture to cool for a few minutes then mix in 1/2 cup of shredded mozzarella and the egg.
Line a baking sheet with parchment paper. Once the cauliflower/egg/cheese mixture is good to go form into a pizza shape of your choice on the parchment paper.
Bake for 20-25 minutes. Keep checking on it, when it starts getting brown take it out of the oven and keep the oven going.
Get your ingredients ready to top the pizza. I usedÂ buffaloÂ mozzarella, tomatos, red onion and basil.
Add toppings of your choice and put back in the oven. When cheese is bubbling take pizza out of the oven. Allow to cool, put on a fancy plate and stuff your face.
